
Idaho wine has a story worth telling, and on the evening of June 9, we are pouring it one glass at a time. Our wine dinner, hosted by Wine Director Devin Zendel, brings together six of the wineries we believe represent the very best of what this state can produce. Here is a look at who will be in your glass.
Acidity Vineyards
This one is personal. Acidity Vineyards is the project of our Wine Director, Devin Zendel, founded in 2026 and rooted in Nampa’s Snake River Valley. The debut release is a Viognier from vines that have been in the ground for twenty years, and it comes in a limited run of just 56 cases. For Devin, this is the wine that started everything. For our guests, it is a rare opportunity to taste something truly made from the inside out.
Huston Vineyards
Established in 2006 and located on Chicken Dinner Road along the Sunnyslope Wine Trail, Huston is a family operation that farms first and bottles second. Named Northwest Idaho Winery of the Year in 2023, Huston has built its reputation on small-lot, estate-grown wines that speak directly to the volcanic soils and diurnal swings of the Snake River Valley. Rolling Hills Vineyard
Mark and Lori Pasculli acquired a neglected Cabernet Franc vineyard in the Eagle Foothills in 2016 and spent years revitalizing the soil before producing their first commercial vintage. The effort paid off quickly. Their estate Cab Franc earned a Double Platinum and 96 points from Great Northwest Wine in 2021, and the winery has been one to watch ever since. 3100 Cellars
Idaho’s only sparkling winery, 3100 Cellars was founded by Hailey and Marshall Minder, who started making wine in 2014 with a commitment to producing world-class traditional method sparkling wine in the Snake River Valley. Their Whitewater Chardonnay took the Gold Medal for Best Sparkling Wine at the 2024 Idaho Wine and Cider Competition. Telaya Wine Co.
Founded by Earl and Carrie Sullivan in Garden City in 2008, Telaya specializes in Old World-inspired reds built to age, sourcing fruit from carefully selected vineyards in both Idaho and Washington. Their flagship Turas blend, made entirely from Idaho grapes, has been the heart of the brand since day one and remains one of the most distinctive expressions of Idaho Syrah being produced today. Bitner Vineyards
Established in 1981, Bitner is home to some of the oldest blocks currently in production in the region, with its original Riesling and Chardonnay plantings still bearing fruit after more than four decades. Founded by bee biologist Dr. Ron Bitner, the vineyard is Idaho’s first LIVE certified sustainable, Salmon-Safe certified, and Bee Friendly certified operation, and its wines carry that dedication to the land in every vintage.
